Yummy Chicken Curry Penne Pasta Recipe

This is a great go-to dish and so simple to make. With a rich taste and super creamy, this is sure to be a family favourite! This chicken curry penne pasta dish is easy to make and makes GREAT leftovers for the next day as the spices will enhance. Oh, and don’t forget the Watkins spices…they truly make the difference!

Chicken Curry Penne Pasta

Looking for comfort food meets a touch of spice? Look no further! This creamy curry chicken penne is as flavorful as it is colorful!

  • 1/4 cup Butter
  • 2 TBSP Coconut Oil (use unrefined for coconut flavor!)
  • 4 TBSP Watkins Organic Curry Powder
  • 2 TBSP Watkins Organic Garlic Powder
  • 4 boneless chicken breasts (cubed)
  • 1 tsp Watkins Pink Himalayan Salt
  • 2 tsp Watkins Pepper
  • 1 cup Heavy Cream
  • 2 cups cooked penne noodles
  • 1 cup peas (frozen or fresh)

Frying Sauce

  1. In saucepan, add butter and coconut oil along with curry and garlic powder. Stir until all is melted together.

Main

  1. Once chicken is chopped into cubes, sprinkle with salt and pepper. Add chicken to the saucepan and stir until cooked. Once cooked, add the cream. Simmer 15 min and set aside.

  2. In larger pot, cook 2 cups of penne noodles. Drain and add to the chicken and cream mixture. Stir to mix well and add peas. Let simmer and stir occasionally. If sauce gets soaked up, add more cream if necessary.

You can adjust the spice to suit your taste preferences. For a neat combination, add some honey to your dish! It cuts down the spice of the curry but still allows the flavour to come through. I find kids really like it this way if they are not curry-lovers!

If you have a mixed audience (some like it hot, some like it not!) then make the recipe as is and each person can add more curry and/or honey to their preference!
